October’s Fresh Pick: Green Apple in Skincare
by Christine Dunn, National Director of Education
October 13th, 2026
October brings cooler temperatures, crisp air, and the height of apple-harvest season in many growing regions. Depending on the variety and location, apples are harvested from late summer through fall, with many reaching peak maturity in September and October. Temperature, sunlight, growing conditions, and the fruit’s natural production of ethylene all play a role in the apple’s ripening, flavor, color, and texture. And then there is the unmistakable freshness of green apples. Its clean, crisp aroma perfectly complements the season and, while green apples are not considered a traditional aromatherapy essential oil, its fragrance can lend a bright, refreshing, and uplifting sensory quality to a spa treatment or skincare ritual.
From Orchard to Skincare
The appeal of the apple extends well beyond its delicious taste and invigorating aroma. In skincare, apple-derived ingredients bring a naturally sourced combination of sugars, organic acids, and polyphenols to cosmetic formulations. On an ingredient list, apples may appear under names such as Pyrus Malus (Apple) Fruit Extract or Pyrus Malus (Apple) Peel Extract. The precise composition and benefits of an extract depend on the part of the fruit used, the extraction process, its concentration, and the finished formula.
Apple extracts may contribute naturally occurring compounds that support formulas designed to condition, moisturize, and refresh the appearance of skin. Apple peel generally contains a greater concentration of polyphenols than the fruit’s flesh, although the amount and composition delivered by a cosmetic ingredient varies according to the specific extract, manufacturing process, and formulation.
A Closer Look at Apple’s Key Components
Saccharides
Apples naturally contain sugars known as saccharides. In skincare, saccharide-rich ingredients can help support moisture retention, leaving the skin feeling soft, comforted, and hydrated.
Malic Acid
One of the apple’s most interesting skincare components is malic acid, an alpha-hydroxy acid (AHA) naturally found in apples and other fruits. AHAs help encourage the release of dull surface cells, supporting smoother-looking texture and a fresher, more radiant-looking complexion.
Malic acid has a larger molecular structure than glycolic acid, which may allow it to work more gradually. As with any exfoliating acid, its performance and tolerability depend on its concentration, pH, and the overall formulation.
Polyphenols
Polyphenols are naturally occurring plant compounds recognized for their antioxidant activity. In topical skincare, antioxidants help provide support against free radicals generated by environmental stressors. This protective support can contribute to a healthier, more resilient-looking complexion. The results ultimately depend on the types of polyphenols present, their stability, and their concentration within the finished formula.
Phloridzin
Phloridzin is a distinctive polyphenol naturally found in apples and in other parts of the apple tree, including the peel, leaves, and bark. Laboratory research has explored its antioxidant and anti-glycation activity, making it an intriguing compound in age-supportive skincare.
As an antioxidant, phloridzin has demonstrated the ability to scavenge reactive oxygen species (ROS), which are associated with oxidative stress. Research has also explored its potential role in the processes associated with glycation.
Glycation occurs when sugars attach to proteins and can contribute over time to changes in structural proteins such as collagen and elastin. While research into phloridzin's anti-glycation activity is still developing, its antioxidant properties make it an interesting apple-derived compound for skincare formulations focused on supporting the appearance of healthy, youthful-looking skin.
Sodium Cocoyl Apple Amino Acids
Apple can contribute to skincare in another unexpected way: cleansing.
Sodium Cocoyl Apple Amino Acids is an apple-derived, multifunctional surfactant used to cleanse and condition the skin. To create the ingredient, proteins obtained from apple seeds are hydrolyzed, or broken down, into amino acids. These amino acids are then combined with coconut-derived fatty acids and converted into sodium salt.
The result is a versatile cleansing ingredient that combines the properties of both components. The coconut-derived fatty portion helps interact with oils and surface impurities, while the apple amino acid portion is compatible with water. Together, they help lift impurities from the skin and rinse them while supporting foam quality and skin conditioning.
It is a great example of how apple-derived ingredients can contribute far beyond the traditional "fruit extract" story, becoming an integral part of a formula's cleansing performance, texture, and sensory experience.
How Apple Extract Is Produced
There is no single method used to produce every cosmetic apple extract. Depending on the desired properties, manufacturers may begin with the whole fruit, pulp, peel, or another specified part of the apple.
The selected plant material is cleaned and processed before its desired compounds are extracted using a suitable medium, such as water, glycerin, or another solvent. The resulting extract may then be filtered, purified, concentrated, and standardized before being incorporated into a cosmetic formula.
The plant material selected and the extraction method used can influence the extract's final composition, making each apple-derived ingredient unique.
